SAMBAL IKAN RICA RICA 

INGREDIENTS: 
1 KG MACKEREL(SLICE ABOUT 
3/4 INCH THICK RUB WITH A LITTLE SALT AND TUMERIC POWDER AND FRY HALF COOK) 12 NOS. CHERRY TOMATOES 
20 NOS. THAI BASIL(DAUN SELASIH) 
2 NOS. BRUISED LEMON GRASS(SERAI DI TITIK)
 2 NOS. ONION SHREDDED 
5 NOS. KALAMANSI EXTRACT JUICE(LIMAU KASTURI AMBIL JUS) 
A LITTLE OIL FOR FRYING ABOUT 5 TBLSP 
SALT AND SUGAR TO TASTE 

GROUNDED INGREDIENTS 
15 NOS. RED CHILLIES 
4 NOS. GARLIC
1 TBLSP BELACAN 
1 SLICE GALANGAL(LENGKUAS) 
GRIND ALL ABOVE INTO PASTE(ADD ABOUT 1/2 CUP WATER TO GRIND) 

METHODS 
1. HEAT UP OIL AND ADD IN THE GROUNDED PASTE AND BRUISED LEMON GRASS, STIR FRY UNTIL FRAGRANTS. 
2. ADD IN THE ONIONS, TOMATOES, JUICE, SALT, SUGAR AND HALF OF THE BASIL LEAVES STIR AND LEAVE TO COOK FOR ABOUT 3 MINS WITH SMALL FIRE. 
3. LASTLY ADD IN THE FISH AND BALANCE BASIL MIX WELL AND READY TO BE SERVE....... NOTE: FOR THE FISH U CAN USE FISH LIKE BLACK PROMPHET, SEABASS OR SELAR BESAR
