BROWN SUGAR MARBLE CAKE FROM CHEF TANIA.
INGREDIENTS
9 NOS. LARGE EGGS (USE 7 WHITE ONLY)
250 GM MELTED BUTTER*
1 TSP BUTTER SCOTCH ESSENCE OR VANILLA ESSENCE
100 GM CASTER SUGAR
130 GM BROWN SUGAR
2 TBLSP CONDENSED MILK
1 TBLSP OVALETT
250 GM TOP FLOUR
10 GM ICE CUBES
1 TBLSP CHOCOLATE PASTE*
2 TBLSP COCOA POWDER SIFTED*
METHODS
1. IN A MIXING BOWL ADD ALL ABOVE INGREDIENTS EXCEPT WITH THE * AND BEAT AT HIGH
SPEED UNTIL WHITE AND FLUFFY.
2. ADD IN MELTED BUTTER USE A WOODEN SPOON MIX WELL.
3. DIVIDE INTO 2 BOWL ADD IN CHOC PASTE AND COCOA POWDER IN 1 BOWL.
4. PREPARE 9 X 9 X 3 BAKING TIN ,LINE BASE WITH BAKING PAPER AND RUB ALL AROUND WITH BUTTER, STAR PUTTING BATTER FROM THE CENTRE OF TIN LAYER BY LAYER, HAT IS 1 LAYER BROWN AND 1 LAYER PLAIN AND REPEAT PROCESURE UNTIL BATTER FINISHED.
5. HEAT 0VEN AT 180 AND BAKE ABOUT 45 MINS TO 1 HR.
Resepi Fondant Yasmin
Fondant / plastic icing / Sugarpaste for covering cakes
5 teaspoon gelatine
2 tablespoon water
125 ml liquid glucose
1 tablespoon glycerine
1 kg icing sugar (sieved twice)
A few teaspoon of shortening
Method
Soak the gelatine in the water in a small bowl. Leave until the
gelatine is spongy. Put the bowl in a bigger pan with hot boiling
water in it, stir. Once the gelatine is dissolved, add the glucose and
glycerine. Stir until all melts and has a syrup consistency (not
lumpy). Make a hole in the middle of the icing sugar and add the
mixture. Knead until you get a dough. Mix in the shortening and
continue kneading until the dough sticks together.
Once its ready, wrap it in plastic clingwrap and put in a tight
tupperware. Do not freeze or put in the fridge, just keep it in a cool
place, for example your kitchen cabinet. Makes 1 kg, the equivalent of
the icing sugar used.
